Bed-Stuy, Get Ready to Meet the Kolache

Brooklyn Kolache Co. will soon be bringing the Czechoslovakian filled pastries to DeKalb Avenue.

Brooklyn Kolache Co. is coming soon to DeKalb Avenue, and owner Autumn Stanford is hoping her Czechoslovakian-style filled buns will take Bed-Stuy by storm, according to the Brooklyn Paper.

An old article from Texas Monthly (the Lone Star state is home to a large Czech immigrant population, and was where Stanford fell in love with the snack) describes a kolache as a sweet dough bun filled with fruit, cheese or meat.

“Kolache’s are an obsession there — you can find them in any donut shop or gas station at the side of the road,” Stanford told the Paper, and was amazed that she couldn’t find any in New York.

The article says that Brooklyn Kolache Co. will soon move into a 1,000 square foot space (with additional backyard) at 520 DeKalb Avenue, between Skillman Street and Bedford Avenue.
